Step 1

Cook hashbrown patties according to package instructions.

Step 2

Meanwhile, Heat 1 tsp olive oil or plant-based butter in a small saucepan over medium-high heat.

Step 3

Add onion or shallots with a pinch of salt, and cook until translucent, about 3 minutes.

Step 4

Add canned baked beans, sugar or maple syrup, yellow mustard, and nutritional yeast, and stir to combine. Cook until heated through.

Step 5

Taste & season with salt and pepper.

Step 6

Make toast and butter it.

Step 7

On each piece of toast, place a hashbrown patty, and then top with a couple of spoonfuls of baked beans and some vegan cheese of choice.
