Set your oven’s broiler to high.Heat olive oil in an 10-inch nonstick skillet over medium-high heat.Add onions and red pepper flakes, and sauté until onions are translucent, 2-3 minutes. Add garlic and salt and pepper to taste, and cook for 30 seconds. Add rice and use a spatula to press into a flat, even layer. Cook for 1 minute. Pour in egg whites. Add mozzarella match sticks in a circular sunburst pattern. Add gruyère. Add more salt and pepper to taste, soy sauce and Worcestershire.Place skillet under broiler and cook until set, 1½ minutes. Check frittata and broil an additional minute if necessary. Let cool, slice and serve.
