Step 1
Preheat your oven to 400 degrees fahrenheit.
Step 2
Place the chicken thighs, sliced kumquats and red onion in a cast iron or oven safe dish. Drizzle olive oil over everything and use your fingers to make sure everything is coated, including both sides of the chicken.
Step 3
Season the chicken with the dried basil, salt and pepper.
Step 4
Transfer the pan to the oven and cook for 40-50 minutes or until cooked through.
Step 5
If you'd like the top of the chicken more golden, turn the top broiler on for the last 5 minutes of cooking.
