Step 1
In a skillet, heat the oil over medium heat. Add the garlic, and cook until it’s softened, 3-4 minutes.
Step 2
Transfer the cooked garlic to a large mixing bowl. Add the softened butter, Parmesan cheese, parsley, Calabrian chile paste, and kosher salt. Mix until smooth, and set aside.
Step 3
Slice the boule horizontally to create two large rounds. Spread a little garlic butter on the interior sides of each half. Place the halves buttered-side down in a large skillet or on a griddle over medium heat. Toast until golden and crisp, 3-5 minutes per side. Remove from heat.
Step 4
Generously butter the untoasted sides of the bread with the garlic butter. Then layer with Cheddar slices, mozzarella slices, and the shredded pepper Jack. Place the other half of the boule on top.
Step 5
Return the assembled sandwich to the skillet, pressing gently. Cover and cook on low to medium heat until the cheese begins to melt, flipping carefully to toast both sides evenly, 12-15 minutes total.
Step 6
Let the sandwich rest for a minute, then slice it into portions, and serve warm.
