Step 1
Separate the egg whites from the egg yolk and set the egg whites aside. Whisk the egg yolk in a medium bowl and set aside.
Step 2
Place the chocolate in a small bowl and melt in the microwave, mixing every 10 seconds until completely melted and smooth, about 30-40s. Set aside to cool.
Step 3
In a separate small bowl, mix the cocoa powder and yogurt until smooth and lump free.
Step 4
Once the melted chocolate is warm, fold in the yogurt mixture until fully incorporated.
Step 5
Fold the chocolate yogurt mixture into the egg yolk. Set aside.
Step 6
Whisk the egg white and stevia in a large bowl until stiff peaks form, about 5 minutes.
Step 7
Gently fold 1/2 of the egg white mixture into the chocolate yogurt mixture. Try not to exceed 10-12 folds.
Step 8
Gently fold in the chocolate yogurt mixture into the remaining egg white mix. Try not to exceed 12 folds.
Step 9
Pour the mousse into two ramekins and allow to set in the fridge for at least 3 hours, overnight is better.
