Step 1

Preheat oven to 180°C/360°F.

Step 2

Slice the tomatoes to about ¼ cm thick and the cheese a little thinner.

Step 3

Spread a little olive oil on the bread.

Step 4

Layer the mozzarella and then the tomatoes on the bread.

Step 5

Chop and add basil, salt and pepper.

Step 6

Bung in oven for 5 mins or so, or until golden brown with melted cheese.

Step 7

Put the vinegar on last for the fullest flavour.

Step 8

Eat!
