Step 1
Simmer black beans on low in a small sauce pan for 4-5 minutes with 1/4 teaspoon of salt - stir often.
Step 2
In a pan heat oil on low to medium heat - add diced peppers with 1/4 teaspoon salt - saute for 5 minutes until soft. Add frozen corn, stir and cook for another 2 minutes until corn is cooked. Then add seasonings to peppers and corn.
Step 3
Serve black beans, corn & peppers over cooked rice with chopped cilantro, avocado, and Green Goddess Dressing.
