Pre-heat oven to 180°C (356°F).

In a small bowl, mash the banana using a fork. Whisk in the stevia, applesauce and vanilla extract until well combined.

Then mix in the flour, baking powder and cinnamon. Pour the batter into a 7-ounce ramekin dish and bake for 30-40 minutes or until a toothpick inserted into the center comes out clean.
