Step 1

Preheat a cast iron skillet to medium-high heat. Crumble sausage into the skillet, season with salt and pepper, and cook until no longer pink (around 7 minutes).

Add diced red pepper and cook until tender (about 2-3 minutes).

Step 3

Stir in cream cheese until well blended, then reduce heat to low.

Step 4

Line a baking sheet with parchment paper or a silicone mat. Open a tube of crescent rolls, separate into 4 rectangles, and seal perforations with your fingers. Press out each rectangle into a 6x4, 1/2" thick shape.

Step 5

Turn off the stove and spoon the sausage filling onto each rectangle, spreading it within 1/4 inch of the edge.

Step 6

Roll up the dough jelly-roll style, pinching the seam to seal. Repeat with the remaining dough.

Step 7

Place the baking tray with the sausage roll logs in the freezer for 1 hour.

Step 8

Preheat the oven to 350 degrees. Carefully slice the log into 8-10 pieces and arrange them on the prepared baking sheets. Bake for 15-18 minutes until golden brown.

Step 9

Remove from the oven and serve warm with sliced green onions and diced tomatoes.
