Step 1

Preheat oven to 350 degrees F.

Step 2

Spray a 3-quart baking dish with cooking spray and set aside.

Step 3

In a small skillet over medium-high heat, brown the bacon and onions together.  When the bacon is crisp and the onions are tender, remove from the heat and drain any excess fat.

Step 4

In the baking dish, spread cubed bologna, top with pork and beans, chili beans, the reserved bacon and onions, pimentos and, finally, with the shredded Cheddar.

Step 5

Bake in the oven for 15-20 minutes until the mixture is bubbly and cheese is browning.

Step 6

Remove from the oven and allow to rest for 10 minutes before serving.
