Step 1

Preheat oven to 425 F

Step 2

Cut eggplant into 1-inch chunks and place in a bowl.

Step 3

Toss with the oil, salt and pepper and place on a parchment-lined sheet pan.

Step 4

Bake 20 minutes,  toss the eggplant and roast 12-15 more minutes until the edges are crispy and the centers are tender.
