Step 1
Sear your potatoes until crispy. Set them aside.

Place your beef shank (with bone and marrow) with salt, onion, peppercorns, garlic, and fish sauce in a pot. Pour in your beef broth and cook the mixture for at least 1 hour and 30 minutes.
Step 3
During the process, regularly check to remove the floating scum and add stock/water if necessary.
Step 4
After 10 minutes of cooking, separate the meat from the marrow.
Step 5
When the beef is tender, add two kinds of cabbage and corn, one by one. Let the mixture cook for several minutes before adding new ingredients.
