Step 1
This first step needs is to soak the dried fruit, this can be done over two hours to overnight

Boil water in the kettle, add a tea bag to 250mls of boiled water in a mug and allow to steep for 5 minutes. Remove tea bag

In a small bowl add the dried fruit, sugar and boiling cup of tea and allow to soak for at least two hours until cold, or even over night
Step 4
Preheat the Oven to 180 C Bake
Step 5
Prepare a loaf tray, mine is 21cm by 11cm, line the base with baking paper and grease or spray the sides and base with cooking spray.
Step 6
In a medium bowl add the self raising flour, pour in the dried fruit mixture.
Step 7
Stir with a large wooden spoon, this is a very thick mixture
Step 8
Spoon this into the prepared loaf tin and spread evenly
Step 9
Bake for 30 minutes and check with a knife, it should come out clean with no batter
Step 10
Cook for a further 5 minutes at a time until done
Step 11
Remove from the oven
Step 12
Allow to cool for 20 minutes in the tin, then turn out onto a wire rack to completely cool

Slice and serve, warm or cold
Step 14
Store in an airtight container.
