Step 1
Peel and grate the cucumber on a plate. Put the grated cucumber in a sieve, with a bowl under, sprinkle with ½ teaspoon salt and mix well. Let cucumber sit for about 15 minutes.
Step 2
In the meantime peel and finely chop garlic cloves. You could also press them. In a bowl combine yogurt, oil and garlic and mix well. Season with salt and pepper. After 15 minutes squeeze out the remaining water from the grated cucumber using your hands and stir it it in the yogurt mixture. Let your tzatziki rest for some hours.
