Step 1
This recipe is designed for one person only, since most people get on keto solo in a family. Double all the quantities for all marinades (except for Pesto) if you are cooking for 2

Note: The process to make both these marinades is the same.

For each marinade, put its ingredients in a bowl and whisk it for a couple of minutes with a whisk or a fork. Marinade is ready. You will have two different marinade bowls ready
Step 4
For each marinade, put its ingredients in a food processor and make into a paste. Chimicurri and Peri Peri will not look like a paste but all the ingredients would be minced well.
Step 5
Put all the ingredients in the food processor and blitz to crush the nuts for around 30s in full speed.
Step 6
Add 1 tbsp oil and blitz the food processor again for 30 seconds. Repeat this process till all the oil is incorporated. If you feel that the ingredients are still very chalky or thick, add some more olive oil to make into a course paste.
Step 7
Marinade each chicken piece with the 6 respective marinades
Step 8
Put them in different zip lock bags and put them in the freezer. You can take one bag out for each day. Don't put all the chicken in one bag as it will be difficult to take individual pieces out, once frozen. If you are just looking to make something the same day or the next day, then marinate the chicken for at least 1 hour in the refrigerator (not the freezer)
Step 9
Before cooking, ensure the chicken is fully thawed and is brought to room temperature
Step 10
Heat a grill pan (or any non stick pan) in a low flame for about 3-4 minutes. Ensure the pan is hot but not fuming up
Step 11
Add 1 tsp olive oil in the pan and place the chicken breast piece. Cook that side without moving it around for 5 minutes in low to medium heat. It will give you a nice crustation to the chicken
Step 12
Using a flat spatula, turn the chicken and cook for another 5 minutes.
Step 13
Note: To check if your chicken is cooked or not, insert a knife through. If it goes through, the chicken is cooked. If not, give it another few minutes. If you are using a larger chicken piece, then cook for another 2 minutes
