Step 1

Pre-heat oven to 180°C (356°F).

Step 2

In a medium bowl, mix together the flour, Stevia and baking soda. Fold in the applesauce, peppermint extract, vanilla extract and oil until fully combined.

Step 3

Fold in the chocolate chips and the crushed candy cane pieces.

Step 4

Scoop the batter in three equal balls and place onto a prepared baking tray.

Step 5

Bake for 8 minutes. Let the cookies cool on the tray for 5 minutes before transferring to a cooling rack to cool completely.
