Preheat oven to 400 degrees. Season halibut fillets on both sides with salt and pepper. In an ovenproof skillet, heat olive oil over medium heat. Lay in fillets and scatter grapes all around. You want to leave about an inch of space between fillets. If the pan looks overcrowded, use two pans.Place 1 tablespoon butter on each fillet, and transfer pan to oven. Roast on center rack until fish is cooked through and flakes easily when pressed at its thickest point, 10-15 minutes depending on thickness of fillets.Remove pan from oven and squeeze lemon over fish. Scatter almonds all around. Taste the pan sauce and season with additional salt or lemon as needed. Serve immediately.
