Heat a small skillet over medium-high heat and spray with coconut oil.Break off about 2/3 of your banana, slice it into smaller pieces then cut each piece in half lengthwise (so that the banana seeds are exposed in each piece).Cook the bananas seed side down until the bottoms turn golden brown.Flip bananas over to let the other side brown. If using the brown sugar, sprinkle it over the slices now.Toss in the pan and flip slices until both sides are brown and caramelized.Remove the pan from the heat and set aside.In a small bowl, mash together the remaining third of your banana with a fork very well until it becomes smooth and syrupy (you can also use a blender for this).Stir the vanilla, molasses, and salt into the mashed banana until smooth. Magic “caramel” sauce!Scoop greek yogurt into a bowl and top with the caramelized bananas. Drizzle sauce over top and enjoy!
