Step 1

In a medium bowl, mash the bananas. You can use your hands, a potato masher, or a fork to do this. Make sure any large chunks or pieces of the banana are finely mashed. Add in the eggs and vanilla, mixing to combine all of the ingredients.

Step 2

In a large mixing bowl, cream the softened butter and the sugars. Combine together until it looks like wet sand.

Step 3

Add the banana mixture to the butter and sugar mixture. Mix together on low speed or with a fork or whisk until the ingredients are combined.

Step 4

Gradually stir in the dry ingredients of flour, salt, and baking soda, until a smooth and creamy batter forms. Stir in the chopped nuts or raisins if using.

Step 5

Transfer the batter to small baking pans that have been sprayed with nonstick cooking spray and then set aside while the air fryer is preheating.

Step 6

Preheat the air fryer to 330 degrees for 3-5 minutes.

Step 7

Once the air fryer is preheated, Place the pans in the center of the air fryer basket. Air fry at 330 degrees F for 20-25 minutes, until a toothpick is inserted and can be removed clean. Let bread cool and then remove from pans.
