Step 1

Wash the baby potatoes, and dry them with a paper towel or kitchen towel. Then using a sharp knife, cut the potatoes in half, add the olive oil and salt, and toss well, to coat the potatoes.

Step 2

In a small bowl, add all of the Indian spices, and mix well, set aside.

Step 3

Add the potatoes to the air fryer basket in a single layer, placing the cut side down. Set the temperature to 400 degrees F using the air fryer setting, and set the cooking time for 10-12 minutes. When the potatoes are fork-tender, remove them with a fork, and place them into a large bowl. Add 1 teaspoon of high-heat oil, then toss with the spice mixture.

Step 4

Add the seasoned potatoes back into the air fryer basket in a single layer, set the cooking time for 5-7 minutes at 400 degrees F, and cook when the outside is crispy and golden brown.

Step 5

Serve with a squeeze of lemon juice, and garnish with fresh herbs.
