Preheat airfryer to 200C. Line base and side of airfryer basket with foil, allowing foil to extend up the side.
Step 2
Combine beans, rice and tomato in a bowl. Divide bean mixture among tortillas. Sprinkle with 25g (1/4 cup) cheese. Fold tortillas to enclose filling. Place, seam-side down, in air fryer basket. Pour over enchilada sauce and sprinkle with remaining cheese. Cook for 6 minutes or until golden and edges of tortillas are crisp. Sprinkle with coriander. Top with a dollop of sour cream to serve.
