Step 1
In a medium bowl, beat the softened cream cheese until smooth and creamy. Add in the granulated sugar and vanilla extract, mixing well until fully combined and smooth. Set aside.

Lay one egg roll wrapper on a clean, flat surface with one corner pointing toward you (diamond shape).

Spoon about 1 tablespoon of the cheesecake filling onto the center of the wrapper.

Add about 1-2 teaspoons of cherry pie filling on top of the cheesecake mixture.

Fold the bottom corner up over the filling, then fold in the two side corners, and roll the wrapper tightly, similar to how you would roll a burrito.

Brush the top corner with beaten egg to seal the egg roll completely. Repeat with the remaining wrappers and filling.
Step 7
Preheat your air fryer to 375°F (190°C) for about 3 minutes.
Step 8
Lightly spray the egg rolls with cooking spray to help them crisp up.
Step 9
Place the egg rolls in a single layer in the air fryer basket, making sure they are not touching.
Step 10
Air fry for 8-10 minutes, turning halfway through, until the egg rolls are golden brown and crispy.
Step 11
Once done, remove the egg rolls from the air fryer and let them cool slightly. Dust with powdered sugar if desired and serve with extra cherry pie filling for dipping.
