Step 1
Preheat air fryer to 200°C, according to manufacturer’s instructions. In a medium bowl, mix all the potato ingredients, with plenty of seasoning, until well combined and evenly coated. Put the potatoes into the air fryer (in the crisper basket, if your model has one). Close the lid/drawer and cook for 20min, shaking/turning the potatoes halfway through.
Step 2
Meanwhile, put chicken breasts on a board, cover with clingfilm and bash with a rolling pin until 1cm thick. Put the flour and some seasoning into a shallow bowl. In another bowl, mix the breadcrumbs with the Parmesan. In a third bowl, beat the eggs. Coat each chicken breast in flour, tap off excess, dip into the egg, then coat in breadcrumb mixture.
Step 3
After the potatoes have had their 20min cooking time, give them another shake or turn, then carefully put the coated chicken breasts on top of the potatoes and return to the air fryer. Continue to cook for 15min, or until the chicken is cooked, turning the chicken halfway through. Top the chicken with tomato sauce and mozzarella. Continue to cook until cheese is melted and golden, about 4-5min. Serve with a green salad, if you like.
