Step 1

Preheat the air fryer to 400 degrees F.

Step 2

Cut chicken breasts in half lengthwise, then place halves onto a plastic cutting board.

Step 3

Place plastic wrap on top and pound out to 1/4-inch thick.

Step 4

Sprinkle both sides of chicken with salt and pepper.

Step 5

In a shallow bowl/plate, beat the egg and 1 tablespoon of lemon juice together.

Step 6

Combine breadcrumbs and cheese in a second shallow bowl/plate.

Step 7

Dip the chicken into the egg, then the breadcrumb mixture.

Step 8

Spray the basket with cooking spray. Place in two of the chicken breast halves. Spray tops with cooking spray.

Step 9

Cook 8 minutes, turning halfway until golden and cooked through.

Step 10

Repeat with remaining chicken.

Step 11

While chicken is cooking, make the lemon sauce.

Step 12

In a small saucepan, melt the butter over medium heat.

Step 13

Add in garlic and sauté for 30 seconds.

Step 14

Whisk in flour and cook for an additional 60 seconds.

Step 15

Add the chicken broth, wine, lemon juice, lemon zest, and pepper.

Step 16

Bring to a boil over high heat whisking continuously. It should thicken very quickly.

Step 17

Remove from the heat and stir in the capers.

Step 18

Serve with cooked chicken and enjoy!
