Preheat air fryer to 400F.
Step 2
On a large plate add mochiko flour, salt, and pepper. Stir to combine. To another plate add eggs. Whisk to combine. To the last plate add panko and coconut flakes. Stir to combine.
Step 3
Pat shrimp dry. Dip in the flour mixture, then the egg mixture, and then the panko mixture. Place on a plate.
Step 4
Once the air fryer has preheated. Place shrimp in a single layer in the basket. Cook for 10-12 minutes, flipping halfway through, or until golden brown.
Step 5
Use your favorite dipping sauce and ENJOY!
