Step 1
Poke holes in your sweet potato, wrap with paper towel and place in the microwave for 4-6 minutes or until softened. Remove and peel off skin.
Step 2
Line a baking sheet with wax or parchment paper.
Step 3
Place baked sweet potato in a medium size bowl. Add goat cheese, balsamic, salt and pepper. Stir until evenly combined.
Step 4
Take about 1 tbsp of the mixture and roll it in your hands into a ball shape. Place on the baking sheet and repeat. Place balls in the freezer for 15-20 minutes.
Step 5
Place corn flakes in your food processor and pulse until you have fine crumbs. Place the crumbs in a shallow bowl. Repeat with the flour and egg so you have 3 separate bowls.
Step 6
Once the balls are chilled, remove from freezer. Roll into flour mixture, then egg mixture, and lastly in the cornflakes. Place back onto baking sheet and repeat with remaining balls. Freeze again for 10 minutes.
Step 7
Place about 4-5 goat cheese balls (depending on the size of your air fryer) about 1" apart and bake at 400 degrees for 6-8 minutes. They should be lightly golden and crispy.
Step 8
Let cool 2 minutes before removing. Place onto a serving plate and drizzle generously with honey and sprinkle with fresh rosemary. (drizzle with balsamic glaze if desired).
Step 9
Serve immediately.
