Step 1

Preheat your air fryer to 350 degrees.

Step 2

Scoop out the meaty part of your cooked potato into a bowl. leaving about 1/4 inch above the skins. Save the scooped out potatoes for mashed potatoes later.

Step 3

Add your cheese to each hollowed out potato skin.

Step 4

Sprinkle on your cooked bacon.

Step 5

Place the potato skins in the air fryer basket and cook for 4 minutes. Your timer may beep to flip the potato skins over, but leave them skin side down the entire time.

Step 6

Remove, allow to cool and add the sour cream and chives.
