Step 1
Let the ribeye steaks sit at room temperature for 10 Minutes, pat each side dry with a clean paper towel.

Brush the olive oil on all sides of the ribeyes, sprinkle with salt and pepper, set aside.

Preheat the air fryer to 400℉.
Step 4
Spray the air fryer basket with nonstick cooking spray and add the steaks, set the timer for 10 minutes.
Step 5
After 5 minutes have passed, flip the steaks over and cook for the remaining 5 minutes.
Step 6
Insert a food thermometer, if it reads 125℉-130℉ the steaks will be a perfect medium rare after resting. Loosely cover the steaks with foil to rest for 5-10 minutes. After resting the steaks internal temperature should read 130℉-135℉ for medium rare.
Step 7
While the steaks are resting, add the softened butter to a bowl with the minced shallot and chopped scallions. Using a hand mixer or rubber spatula mix the butter until completely mixed.
Step 8
Serve the steaks with the shallot herb butter, enjoy!
