Ingredients: 2 Tablespoons aji amarillo paste; 1 small shallot (minced); 2 cloves garlic (peeled); 1/2 cup mayonnaise; 1/4 cup Greek yogurt ( or sour cream); 1/4 cup crumbled feta (ricotta, or queso fresco); 1 Tablespoon ketchup (or tomato paste); 2 Tablespoons lime juice (plus more to taste); Salt and pepper (to taste)

This Aji Amarillo Sauce is a spicy and versatile Peruvian condiment. Spicy yellow pepper paste is blended with creamy and tangy ingredients, leaving you with an outstanding dipping sauce, spread, or dressing.

Aji Amarillo Sauce Recipe

Tablespoons aji amarillo paste

shallot (minced)

garlic (peeled)

mayonnaise

Greek yogurt

feta (ricotta, or queso fresco)

Tablespoon ketchup (or tomato paste)

Tablespoons lime juice (plus more to taste)

Salt and pepper (to taste)

Combine all ingredients in a blender or food processor and process until smooth.

Season with salt and pepper, to taste. Transfer to a bowl and refrigerate until ready to serve.

My daughter brought me some of this sauce from Peru and I loved it. Unfortunately,  I can't find it where I live, but I did find the aji Amarillo paste and tried out your recipe.  So delish!!! Thank you for sharing...I will be making this A LOT! 😊

Just made this to go with a Peruvian Chicken recipe we were trying. This sauce is awesome, but, beware it has a bite. If you are spice adverse, like my wife, maybe cut the aji spice in half.

I just made this and it is an explosion of flavor! Absolutely amazing!!!
