Step 1

In a bowl, combine almond flour with the powdered sugar. Dissolve honey in warm milk. Add egg whites to the flour and sugar, then add the milk and honey, followed by orange and lemon zest and the seeds of half a vanilla pod.

Step 2

Knead together until the mixture is smooth. Transfer batter to a piping bag with a star nozzle and pipe onto a baking tray lined with parchment paper.

Step 3

Decorate with glacé cherries, almond slices, pine nuts, or simply a little powdered sugar; leave to dry for at least 12 hours.

Step 4

Preheat the oven to 410°F and bake on the non-fan setting for 12 minutes.
