Step 1
In large food processor fit with blade, add the almonds and process until finely ground into almond meal.
Step 2
Add in oats, and continue to process until oats are finely ground. Add in coconut, salt and vanilla extract. Process for 1- 2 more minutes to combine everything.
Step 3
Add in almond butter, honey, and water. Process until mixture starts to come together. Add mini chocolate chips and pulse a few times to combine.
Step 4
Scoop by TBS (I use a cookie scoop) and roll into balls then place onto a baking sheet lined with waxed paper or parchment.
Step 5
Refrigerate for 2-3 hours, then remove from pan and store in airtight container. 1 serving = 2 bites.
