Step 1

Preheat the oven to 425 degrees F.

Step 2

Grease a 9x13-inch baking dish.

Step 3

In the prepared baking dish, whisk the brown sugar, the soy sauce, the garlic, and the chicken broth together.

Step 4

Add the uncooked rice, the onion, the bell pepper, and the pineapple with its juices to the broth mixture.

Step 5

Cover the dish tightly with foil and bake until the rice is almost tender and most of the liquid is absorbed, about 50-55 minutes. If the rice is still very firm or if there is still a lot of liquid remaining, cover and return to the oven until the rice is just about done, about 5-10 minutes.

Step 6

Fluff the rice with a fork.

Step 7

Stir the cooked chicken into the rice and sprinkle the bacon on top.

Step 8

Bake the chicken mixture, uncovered until the chicken is warmed through, the rice is completely tender, and the bacon is crispy, about 5-10 minutes.

Step 9

Serve the chicken bake garnished with the green onions, the chives, and the herbs.
