Step 1

Preheat the oven to 350°F/180°C and spray a 10" baking dish with non-stick spray then set it aside.

Step 2

In a large non-stick skillet, cook the chopped bacon pieces and chopped onion for 5 to 7 minutes, stirring regularly. You want to render the bacon and get it crispy, but not burned.

Step 3

Now, mix together the hashbrowns, cream cheese, salt, and black pepper.

Step 4

Pour this mixture into the prepared baking dish.

Step 5

In a large bowl, whisk the eggs until they are combined and no streaks remain. Then, pour this over the top of the hashbrown mixture.

Step 6

Sprinkle the shredded cheddar over the top and bake, uncovered for 1 hour.
