Export 16 ingredients for grocery delivery
Step 1
Preheat the oven to 180°C/ 350°F (fan-forced).
Step 2
In a large mixing bowl add the oats, almond meal, tapioca flour, bicarb, baking powder and salt. Mix together.
Step 3
Stir in approx. ¾ of the diced apple (reserving the rest for the top).
Step 4
In a jug or blender, mix the eggs, oil, sweetener, coconut milk, vanilla and spices until very well combined. Thermomix, 30 seconds, speed 5.
Step 5
Add the wet to the dried ingredients and fold through (take care not to over mix). Allow to sit for 5 minutes and allow the oats to soak up some of the moisture.
Step 6
Make the topping by combining the remaining apple with the almonds, sweetener and cinnamon in a small bowl.
Step 7
Line a 28 x 18cm (approx.) slice tin with baking paper. Pour the batter into the tin and top with the remaining apple and the almond topping, pressing it gently into the batter.
Step 8
Bake for 25-30 minutes or until it feels firm in the middle.
Step 9
Allow to cool fully before slicing (if you’d like a crumb-free slice) otherwise dig in whilst it’s warm.
Step 10
With natural yoghurt or a smoothie for breakfast
Step 11
With cream or creme fraiche for dessert.
Step 12
Portion and store in an airtight container in the fridge or freezer.
