Step 1
Pour the focaccia and ciabatta bread mix (1 pack) into a bowl. Add water (400 millilitre) and combine to make a sticky dough.
Step 2
In a clean bowl, add the olive oil (40 millilitre), cover and rest for 1 hour.
Step 3
Fold the dough 4 times and cover. Repeat the folding process 3 more times, resting 1 hour in between each set of folds.
Step 4
While the dough is resting, coat the chopped apple (and pear (in caster sugar (3 tablespoon) and ground cinnamon (1/2 tablespoon) and set aside.
Step 5
Place the dough in a 30 x 20cm tray greased with butter (2 tablespoon). Carefully push the dough into the corners using your fingertips. Make deep holes in the dough and push in the apple and pear. Allow to rest for 45 minutes.
Step 6
Heat the oven to 200°C fan and bake for 25-30 minutes. Remove from the oven, brush over the butter and sprinkle over the ground cinnamon (1 teaspoon) and white sugar (1 tablespoon) mixed together. Bake for a final 5 minutes and then cool on our wire rack.
