Bring apples to a boil, then reduce heat to a simmer to cook. Continue to boil until apples are desired consistency (approx. 30 minutes in total). Add more water to thin and more coconut sugar to sweeten if desired. Use compote as a base for pie filling, crumble filling, topped on yogurt or oatmeal, or enjoy on its own.
