Preheat oven to 350°F. Line a baking sheet with parchment paper.

In a bowl, mix apple pie filling with cinnamon, nutmeg, and kosher salt. Set aside.

Roll 1 piece of pie dough into a 12-inch round. Using a round cookie cutter with a 3-inch diameter, cut out 12 small rounds and place on the prepared baking sheet.

Reroll the scraps and cut out 2 more rounds, placing them on the baking sheet as well.

Roll other piece of pie dough into a 12-inch round. Cut into 1⁄2-inch wide strips of 3 1⁄2 to 4-inches in length (about 56 pieces total).

Add 1 tablespoon apple pie filling in the center of each round.
Step 7
Create a lattice weave using 4 strips of dough.Trim any dough hanging off the edges. Then, press the edges with a fork to seal.
Step 8
Optional: whisk 1 egg and brush on top of the cookies, if you prefer a more golden crust.
Step 9
Bake cookies until golden brown, about 20 to 25 minutes.
Step 10
Remove to a rack to cool.
Step 11
For the glaze: Whisk together powdered sugar and 2 teaspoons heavy cream. Add up to 1 more teaspoon of heavy cream if the glaze is too thick.
Step 12
Drizzle glaze on top of the apple pie cookies.
