Step 1
In a small bowl, whisk together sugar and cinnamon.
Step 2
Next, pour the apple pie filling onto a cutting board and use a large knife to coarsely chop up the apples. Set aside.
Step 3
In a pan over medium heat, melt ½ tablespoon of butter.
Step 4
Once melted, add a tortilla to the pan for about a minute to allow it to crisp up. Take it out of the pan and set it aside. This tortilla will go on top of the quesadilla.
Step 5
Melt another ½ tablespoon of butter in the pan. Add the second tortilla, then drizzle on 1 tablespoon of caramel sauce. Spread 1 cup of the apple pie filling over the caramel, then drizzle on an additional tablespoon of caramel topping.
Step 6
Then, place the crispy tortilla on top and let the quesadilla heat through. Flip if needed.
Step 7
Finally, dust the top of the apple pie quesadilla with the cinnamon sugar mixture.
Step 8
Move it to a cooling rack and repeat the process for the rest of the quesadillas.
Step 9
Allow them to cool slightly before cutting them into quarters, then serve with caramel dipping sauce or vanilla ice cream.
