Apple Streusel Muffins

all-purpose flour

sugar

baking powder

baking soda

salt

eggs, room temperature

butter, melted

vanilla extract

tart apples

STREUSEL TOPPING:

brown sugar

cinnamon

butter

GLAZE:

confectioners' sugar

2% milk

I think I solved the dryness issue by using oil instead of butter and increasing the apples to 2 heaping cups.  Per other reviews, I added 1 teaspoon cinnamon and skipped the glaze.  Good breakfast muffin.

This is one of the very, very few Taste of Home recipes that I was very disappointed with. The recipe, as written, makes a decent cookie - but not muffin batter. I think there may be an omission in the ingredients.

Excellent.   Thought the batter would be a little too dry, but it worked out fine.  Added a half cup of walnuts to the recipes....we like them over here.  Didn't bother with the glaze, because by the time they cooled down we were ready to try them and found them sweet enough.  Will use this recipe again.

Like Mary (below, Dec 31, 2020), the batter/dough was so dry, less than half of it was anywhere near put together...and even that was crumbly. Now, due to bandwidth limitations, I have not watched the video, and the answer may be there, but looking at the recipe itself, all those dry ingredients with just 2 eggs and half a cup of melted butter does not quite hack it. I simply began adding whole cream, a couple Tablespoons at a time, until the structure was between a dough and a batter (about 3/4 total) and was really delighted at the end results. I ended up doing one recipe as written (plus the cream) and one recipe using stevia in place of the sugar (plus the cream). they were both just wonderful, though the ones using the stevia did blossom up to a nicer well-rounded top.

Read other reviews and adjusted by adding cinnamon and a touch of nutmeg also added more apples!  Probably the most time consuming muffin I’ve ever made but great tasting and very moist!  Will make again!

These were ok. I can't believe I'm saying this but I thought they were too sweet and actually too many apples, and I love both. I made exactly as called for. Not too bad but probably won't make again. Hubby loved them though. I try to be nice when I make negative comments (which isn't often) because I hate when people call them slop, or say they throw in garbage.

The dough was so crumbly. I tried adding a bit of milk and the batter became very sticky. I don't know what went  wrong.

I made the muffins without the glaze and they were amazing.   I would call them mini coffee cakes, so dense and moist from the apples.   I will try them with nuts next time.   I love finding new apple recipes, I am crazy for apples.

I just pulled these out of the oven! They smelled wonderful while baking and tasted even better! I did not use the glaze because I wanted to freeze some of them. I would love to try the glaze next time I make these. My 5 year old picky daughter ate 2 in one sitting! They are very moist and I did not even have to use butter!

This is just about the best Apple Streusel muffin recipe I've ever made.  I make these quite often for home and for bake sales at church.  Everyone loves them!

I made this for a group of teens and they loved it.  I found it to be a bit too many step, so instead of the icing, I covered it with caramel and it was soooo delish.

I didn’t add the streusel topping, opted instead for crystal glazing sugar. Also added a little cinnamon

I made this into a bread instead of muffins and I added 1 tsp. of cinnamon into the batter...and cooked for 50 minutes.  The loaf was gone in a couple hours because no one could get enough!  I'm definitely making this again soon!

Did anyone have a problem with them puffing up over the top of the muffin tin and hollow out. They were delicious but not pretty.

I usually make a different recipe for apple muffins, but decided to try something new.  I liked the dense texture and not overly sweetness of this muffin.  I did add a couple of tablespoons of milk to the batter because it seemed too stiff.  The topping was just right, not too heavy to collapse the muffins, and not too sweet either.  I would make these again.

I followed the instructions to the letter, but the muffins came out dry.

These are great!  I served them at a morning coffee.  Later my husband had one with ice cream for dessert. The batter is stiff but once you add the apples, it is easier to work with.  As far as being dry, we think that the only way this would be dry would be with not using enough apples.  We cut the apples in small cubes so that they were evenly dispersed in the mix and used 2 cups of apples..  Also, took the advice from other reviews and added 1 teaspoon of cinnamon and a small 1/2 teaspoon of nutmeg to the batter.   These were really delicious and we added to our regular recipe box.

I made this recipe twice today. The recipe says it is thick, but that was an understatement, it was more like a really thick dough, so I added a little milk. It still came out very dense and mealy, more like a cornbread in my mouth. My son made it the first time, so there is a possibility he miscounted on flour, but it was still way too thick. The second time I added about 1/3 c. of sour milk in with the liquids and this time it came out very moist and fluffy, completely perfect. I also replaced the apples with frozen chopped peaches the second time and skipped the toppings since I was out of brown sugar. It was still really good. I think it makes a great basic muffin recipe.  I'll definitely make this again.

Great without the glaze.  I used Rome apples, my favorite baking apples.

This is a family favorite.  We never make the glaze.  I use frozen apples if I do not have fresh.

Made as directed. Didn't look like there was enough batter to cover apples.  But I had faith, they turned out FANTASTIC.!
