Step 1
Preheat oven to 375 degrees. Line a large rimmed baking sheet with aluminum foil; set aside. Pat pork chops dry with paper towels and season both sides with salt and pepper and place on prepared pan.
Step 2
In a large bowl, mix together stuffing mix, apple juice, and chopped Honeycrisp apple. Spoon stuffing into pork chops. Fold one side of pork chops over the stuffing and tie with 100-percent cotton kitchen twine or secure with toothpicks.
Step 3
Bake for 40 to 45 minutes, or until pork chops are golden brown and internal temperature reaches 165 degrees. Remove from oven and discard kitchen twine and/or toothpicks.
