Preheat oven to 170°C. Line a deep cake tin (Ø 22 cm) with baking paper and grease the sides with butter.
Step 2
Place sugar, cinnamon, cloves and nutmeg in mixing bowl and grind 20 sec/speed 10. Transfer to a bowl and set aside.
Step 3
Place apple quarters and lemon juice in mixing bowl and chop 5 sec/speed 6. Scrape down sides of mixing bowl with spatula and chop again 5 sec/speed 6.
Step 4
Scrape down sides of mixing bowl with spatula and cook 5 min/100°C/speed 2.
Step 5
Add reserved spiced sugar, flour, butter, eggs, salt and bicarbonate of soda and mix 40 sec/speed 5.
Step 6
Add raisins and walnuts, mix 40 sec//speed 2. Transfer mixture to prepared cake tin and bake 50 minutes-1 hour (170°C) or until a skewer inserted in the centre comes out clean.
Step 7
Leave in tin for 10-15 minutes then run a knife around inside edge of tin before transferring cake to a wire rack to cool. Delicious served warm or cold, perfect with a cup of tea.
