In a serving bowl, drizzle the arugula with the oil, squeeze in the lemon juice, and sprinkle with salt and pepper. Toss until well mixed and taste for seasoning. Use a vegetable peeler to shave thin pieces of Parmigiano over the top.

Made this with the addition of a diced apple.  The sweetness of the apple nicely offsets the “bite” of the arugula and savory flavor of the Parmesan.  A delicious and easy to make salad.  Highly recommended!

I had this in a restaurant in Tampa years ago, but the chef added slices of Bosc pear on top, and it is delicious!

Delish.  So refreshing on a summer day.   I added fresh cherry tomatoes, avocados and fresh mushrooms.   Delish.   

This salad was great! I’ve made it twice and the second time I added grape tomatoes cut in half. Both were great. I will definitely make this again. 

The ONLY way to eat fresh arugula! And great tips about splurging on quality cheese and EVOO. Thanks!

SUPER tasty with the <span>shaved </span>Parm/Regg block and fresh lemon juice. AND....Store was out of Arugula so I used purple and green fresh butter lettuce and it was still delicious. Will definitely have in rotation. 

Perfectly simple, delicious and bright. Will definitely keep this as a staple side salad. 

This was easy to make and refreshing tasty salad.
