In a 6-quart slow cooker, evenly add the pork chops.

In a small bowl, add the hoisin sauce, the brown sugar, the garlic, and the ginger and stir until well-combined.

Evenly pour the sauce mixture over the pork chops, making sure all of the chops are evenly coated.

Cover the pork chops and cook on high until tender, about 4-5 hours.

Turn the slow cooker to the warm setting to keep the pork chops warm.

Transfer the sauce liquid from the slow cooker to a small saucepan over medium-high heat and bring it to a simmer.

In a clean small bowl, add the cornstarch and the cold water and whisk until no lumps appear to create a thickening slurry.

Add the slurry to the simmering sauce liquid and cook, while whisking, until the sauce thickens, about 2-3 minutes.
