Step 1
Heat 2 tbs oil in a medium frying pan over medium-high heat. Cook garlic and chilli, stirring occasionally, for 2 minutes or until fragrant. Reduce heat to low. Add breadcrumbs and cook, stirring occasionally, for 3 minutes or until starting to brown. Remove from heat and stir in almonds, zest and parsley.
Step 2
Bring a medium saucepan of water to the boil over high heat. Add asparagus and cook for 1 minute or until just tender and bright green. Drain.
Step 3
Meanwhile, combine juice, mustard and remaining oil in a small bowl. Arrange asparagus on serving platter. Drizzle with dressing and sprinkle over breadcrumb mixture. Serve.
