Step 1
Break down all ingredients. Slice green papaya into matchsticks, slice carrots into matchsticks, slice garlic cloves into thin rounds, slice ginger into matchsticks
Step 2
Mix together vinegar, water, brown sugar, and salt in a bowl to make the pickling solution
Step 3
Bring pickling solution along with the garlic and ginger to a boil
Step 4
Place the green papaya and carrot into a glass vessel of your choosing. Pack it in as tightly as possible
Step 5
Once solution is at a boil, pour into the vessel with the papaya and carrots and let cool with the lid off for at least one hour
Step 6
Place top on the jar and seal, let pickle in the fridge for at least three days to achieve the right taste. Atchara will keep for at least three months
