Step 1

Preheat oven to 375 degrees F.

Step 2

Heat a deep, ovenproof skillet to medium heat. Add the oil.

Step 3

Add the onions, cook until soft, then add the garlic and seasonings. Stir for about a minute.

Step 4

Add the tomato paste, stir and cook for another minute.

Step 5

Add the tortellini and stir to coat.

Step 6

Add the tomato sauce, stir and add the water.

Step 7

Cover, and cook for 15 minutes.

Step 8

Uncover, sprinkle with the cheese and bake for 15 minutes,or until cheese is melty and browned.

Step 9

Remove, sprinkle with Parmesan and parsley before serving.
