Step 1
In a food processor or blender, combine the avocado, parsley, cilantro, garlic, red wine vinegar, oregano, red pepper flakes and half of the olive oil.
Step 2
Pulse until the mixture is well-combined. With the food processor running, slowly drizzle in the olive oil until the chimichurri is smooth and well-blended. If using a blender, just add the rest of the olive oil and blend. Season with salt and pepper to taste. Adjust seasoning if necessary.
Step 3
Transfer the chimichurri to a serving bowl and serve with crudités.
