Make the dressing: In a blender, combine all ingredients except olive oil. Blitz until smooth. Transfer to a bowl pour in olive oil and stir to combine. Set aside. In a larger salad bowl combine all salad ingredients. Pour over the dressing and toss to combine. Divide into four bowls and serve.
