Step 1

In a large dutch oven or non reactive pot, saute onions, peppers, garlic and meat with a tsp of each salt and pepper

Step 2

Cook until meat is cooked through, 8-10 minutes. Add the remainder of the ingredients and add with just enough water to cover beans

Step 3

(About 1-2 cups.) Bring to a boil

Step 4

Reduce to a simmer and allow to stew for 8 hrs, stirring often to make sure nothing sticks to the bottom

Note: If you only have an hour, it's still delicious, but the more time the better! Adjust the taste to your likeness using salt, pepper and cayenne. Garnish with cilantro, green onions, sour cream, cheese and avocado

Step 6

Slow Cooker Method:In a large skillet, saute onions, peppers, garlic and meat with a tsp of each salt and pepper

Step 7

Cook until meat is cooked through.Add meat mixture, along with remaining ingredients, to a large crock pot

Step 8

Set on low for 8 hours
