Step 1

Preheat your oven to 350°F (180°C) and grease a muffin tin.

In a mixing bowl, combine sweetened condensed milk, lemon juice, eggs, melted butter, self-rising flour, vanilla extract, and lemon zest. Whisk until smooth.

Pour the batter into the prepared muffin tin, filling each cavity about halfway.

Step 4

Bake for 18–20 minutes until golden and set in the center.

Let cool in the tin, then remove and dust with powdered sugar before serving.
